Our corn salad recipe has been a reader favourite for a couple of years now that we have finally made it on video thanks to you! You asked…we listened!
Corn Salad
Corn salad is SO EASY! With a handful of fresh ingredients, you have one of the best salads full of juicy, sweet corn, ripe tomatoes, creamy avocado pieces and red onion slices. We’ve made this extremely versatile for you:
- CORN:Â Use fresh OR canned in this recipe. We prefer fresh corn boiled in milk for plump, juicy corn kernels.
- TOMATOES:Â Grape tomatoes have an amazing flavour, bursting with tomato juice. Use cherry or Roma in their place if you prefer.
- ONION:Â Red onion is great but green onion slices or chives will also work.
How To Make A Good Salad!
Our corn salad is to die for and can be served with anything! Fish, chicken, steak, pork, shrimp, it goes with all of it. Or, leave out the protein and dive head first into this bowl. Either way, it’s your choice!
Corn Salad Dressing
You will love this fan-favourite dressing with a base of lime juice and olive oil. We also add cilantro to ours, but if you’re not a fan you can substitute it for parsley. Add in a pinch of cumin, optional minced garlic, salt and red chili flakes, and you’re onto a winner!

Avocado Tomato Corn Salad
Ingredients
Salad:
- 1 cup Romaine lettuce (or Cos lettuce), shredded
- 2 ears of cooked corn, (shucked and cut off the cob) -- or 14 ounce can corn kernels, drained
- 2 large ripe avocados, halved, peeled, stones removed and diced
- 9 ounces (250 g) grape tomatoes, halved
- 1/8 of a red onion, thinly sliced
Dressing:
- 2 tablespoons fresh lime juice
- 2 tablespoon olive oil
- 1-2 tablespoons chopped fresh cilantro (or parsley)
- 1/2 teaspoon salt to season
- 1/3 teaspoon red chili flakes
- Pinch of cumin
- 1 clove garlic, minced (optional)
Instructions
- Combine all of the salad ingredients together.
- In a small jug, mix together the dressing ingredients to combine well, and pour over the avocado salad. Season with extra salt, if desired. Serve with any protein, or enjoy with Tacos, fajitas, etc.

Making this for the second time for dinner tonight. It is delicious! We had it for lunch the first time with fresh corn on the cob in it. For dinner I may add some baked gardein vegan chikn and or some black beans just to make it a little heartier. I baked a loaf of lemon bread to have with it. Yum! Thanks for this delicious recipe!

I made this salad today and it was outstanding. I used cilantro rather than parsley and next time I might put a touch less red pepper flakes but it was delicious and we will have this again.

Made this salad for the first time tonight and it was a huge hit with my family! Love this one and the other Avocado/Cucumber/Feta salad. I normally don’t like my tomatoes raw (always cooked) but the dressing here takes away the acidity and sharp taste and I enjoyed them in the salad.

Hi Karina, I’ve made that wonderland delicious avocado, corn and tomato salad before and loved it. Weymouth husband and I are it in one sitting. So my question is can it be made ahead of time like a few hours? Or will the avocado turn brown? I want to bring a big bowl to my sisters bbq later today. Thanks for all he great and delicious recipes.

You can make it ahead, I would just prepare the avocado first. It should still be great though! Enjoy your BBQ!!

This salad looked really good except for using canned corn and I didn’t have fresh. I substituted frozen cooked corn that had been cooled. I had no grape or cherry tomatoes so I substituted heirloom tomato from my garden. It was delish. Can you translate your abbreviation for “cos” or romaine lettuce? I have been cooking for 53 yrs and have never come accross the word “cos”. Thank You

Hi Patsy. Cos lettuce is the Australian equivalent to Romaine lettuce.
