- 2 teaspoons sweetener or sugar of choice
- 1/2 teaspoon rum or rum extract optional
- 2 pieces of bread of choice
Creamy Coconut Stuffing
- 3 tablespoons crushed pineapple
- 1/2 tablespoon desiccated/shredded coconut
- 2 tablespoons low-fat/fat-free cream cheese softened
- 2 teaspoons sweetener or sugar of choice
- 2 tablespoons light coconut milk
- 1/2 teaspoon rum or rum extract optional
Instructions
- TOASTS:
- Combine egg, coconut milk, pineapple, and vanilla in a bowl. Whisk well until combined.
- Soak bread in the egg wash until soaked.
- Heat a nonstick pan on low-medium heat and add the bread.
- Fry on each side until golden.
- In the meantime, make your cream cheese stuffing:
