Piña Colada French Toast

Sing with me. “If you like piña coladas and getting caught in the rain. If you’re not into yoga, if you have half a brain..” Ok, so I MAY only have half a brain, but the half that is functioning came up with THIS Piña Colada French Toast! A twist on the classic French Toast.

I love Piña Coladas. I love the pineapple, coconut, and rum flavors! It would have to be one of my favorite cocktails…and I have a few. But Piña Coladas take the CAKE!

Speaking of cake, this is what these French Toasts taste like. Spongey and fluffy just like my best red velvet cake. And the juicy chunks of pineapple just SET.THIS.OFF!!

And how did I think up this recipe?

Well, I was thinking and thinking about HOW to convert French toast into a Piña Colada. But HOW Karina? THINK!

Maybe I swap out normal milk for coconut milk…and maybe if I had pineapple in the egg wash I add the mashed banana into my Banana Bread French Toast, and maybe I add a little rum! Yeah, that should do it!

So, I did it.

What a beautiful and decadent way to wake up and start the day. Rum, rum, rum. Did I mention Rum?

I would say the rum is optional…well it COULD be, but that takes the fun out of it! But it is optional. (Not really).

Piña Colada French Toast

Spongey and fluffy coconut and rum-flavored cake-like French toast stuffed with a rum-infused coconut-y creamy filling!

Ingredients 
 

Toasts

  • 1 egg
  • 4 tablespoons light coconut milk
  • 1 tablespoon crushed pineapple
  • 2 teaspoons sweetener or sugar of choice
  • 1/2 teaspoon rum or rum extract optional
  • 2 pieces of bread of choice

Creamy Coconut Stuffing

  • 3 tablespoons crushed pineapple
  • 1/2 tablespoon desiccated/shredded coconut
  • 2 tablespoons low-fat/fat-free cream cheese softened
  • 2 teaspoons sweetener or sugar of choice
  • 2 tablespoons light coconut milk
  • 1/2 teaspoon rum or rum extract optional

Instructions 

  • TOASTS:
  • Combine egg, coconut milk, pineapple, and vanilla in a bowl. Whisk well until combined.
  • Soak bread in the egg wash until soaked.
  • Heat a nonstick pan on low-medium heat and add the bread.
  • Fry on each side until golden.
  • In the meantime, make your cream cheese stuffing:
  • In a separate bowl, combine all of the Creamy Stuffing ingredients until combined well.
  • When toasts are done, spread the cream cheese mixture over one piece and top with other toast to make a sandwich.
  • Top with remaining creamy stuffing and additional crushed pineapple

Notes

  • Rum extract can be used instead of rum liquor as it will intensify the flavor of rum and reduce the alcohol content
