Most pancake recipes you’ll find online consist of more than eight steps and a million different ingredients, making the preparation stage unnecessarily stressful. There’s no need for that, especially when you’re in a rush to feed teenagers or young kids. They don’t care about vanilla extract, buttermilk, or chilling batters. They just want pancakes… YESTERDAY. During the school holidays, these Easy Pancakes are my go-to. They’re ready, steaming hot, and on the table before my kids even realize it.

  1. Whisk the eggs and milk together to combine. Add in the flour, and beat until the batter is smooth and lump-free. Add in any optional add-ins you like, such as fresh fruits, cinnamon, yoghurt, or chocolate chips here.
  1. Heat a nonstick pan over low-medium heat with cooking oil spray. Wipe over excess; pour the batter per pancake. Cook pancakes for 1 to 2 minutes, or until bubbles appear on the surface and the bases are golden brown.
  1. Flip and cook until golden; transfer to a warmed plate. Repeat with remaining batter, spraying or greasing the pan between every second or third pancake if needed.
  1. Serve immediately with yoghurt, ice cream, whipped cream, maple syrup, berries, or any other toppings you like. Enjoy your fluffy and delicious pancakes!

Ingredients 
 

Pancakes:

  • 2 large eggs
  • 2 cups milk skim, low fat or full fat
  • 2 1/4 cups white self raising flour

Instructions 

  • Whisk the eggs and milk together to combine. Add in the flour, and beat until the batter is smooth and lump free. Add in any option add-ins you like here.
  • Heat a nonstick pan over low-medium heat with cooking oil spray. Wipe over excess; pour about 1/3 cup of batter per pancake. Cook pancakes for 1 to 2 minutes, or until bubbles appear on the surface and the bases are golden brown. Flip and cook until golden; transfer to a warmed plate; repeat with remaining batter (spraying/greasing pan between ever second or third pancake if needed).
  • Serve immediately with yoghurt, ice cream, whipped cream, maple syrup, berries, or any other toppings you like.

Notes

Optional Add-ins:
*2-4 tablespoons sugar
*2 teaspoons baking powder (for extra fluffiness)
*1 teaspoon pure vanilla extract
*Pinch of salt
*1/3 cup chocolate chips
*1/2 cup blueberries or raspberries
*Substitute with plain or all purpose flour if you don’t have self raising. Add 1 tablespoon of baking powder when adding the four and whisk until smooth. You can also use whole wheat or wholemeal flour.

    I made these and they were SO good like I will never buy pancakes again because of how stress-free these were to make. I added a tsp of vanilla extract ‘cos why not.
    I actually made these pancakes without any oil or butter. The trick is to heat the non-stick pan hot enough such that when you pour the batter, it starts bubbling after 1-2 seconds. Then flip over. It’s a gorgeous brown colour, fluffy, smells so good. I’m in love.

    Finally! After 20 years of experimenting with dozens of recipes and boxed mixes it seems that this one is perfect. I lowered the heat, mixed the batter smooooth, increased the baking powder and added blueberries before turning them They were perfect! Looked good, were nice and fluffy and now Its now our go to for Pancakes on every Saturday. thank you!

    I’m from Singapore n I just wanted a 5-10 min recipe to have a quick breakfast without going out and I managed it in 10 mins, making coffee while heating up my 4-egg pan. Made 4 mini pancakes at one go, dished them out and had them with butter n blueberry jam. These pancakes are soft n fluffy!! Beats those complex many ingredient buttermilk pancakes I have tried. No after-taste of baking powder either. Btw I like that I can halve your recipe easily. THANK YOU. So glad I found your recipe. This will be my go-to recipe from now on!!

    Made these today, my kids have a medical condition that they cannot have added sugars, and watch how many carbs. Pancakes is a favorite so I tried these, and they were really good. We tried adding blueberries and sugar free choc chips, but the kids preferred them plain!

    My mom was born in Germany and was raised in A!Erica by her grandmother.. They were poorer than most and her pancakes were Madre with all purpose flour which made for flat pancakes. I loved them and disliked the cake type that the syrup would soak into them,making mush. So I made your recipe, with all purpose flour, added a pinch of salt and a teaspoon and 1/2 of sugar. I FELLT LIKE MY MOM WAS HERE!!! Thank you for finding my history.

    these are INCREDIBLE. i was a little hesitant to make these because i thought they might be a little boring, or just a shortcut for when you’re desperate to eat maple syrup. i added vanilla bean paste and salt, and these wwre incredible without toppings. i’m scared to try the better version!
