If you’re looking for a quick dinner you can throw together after a long day, we’ve got you covered with this easy taco salad recipe. We’ve brought together all of the best elements of a good taco and created a Mexican salad that you’ll no doubt add to your weekly dinner rotation.

If you’ve been following us for a while, you’ll know that my family love a quick and easy meal hack. This easy taco salad is now our new go-to, with its fresh ingredients, classic Mexican flavours and of course, creamy guacamole.

Putting this recipe together was so fast, I even surprised myself. This easy taco salad is great for anyone on a low-carb diet, struggling to find something healthy that will still leave you feeling full and satisfied.

Like our spicy Mexican beef wedges, crispy pork carnitas and our Huevos rancheros tortizza, there are still spoonfuls of tangy Mexican flavour, just without all of the unnecessary carbs. But if carbs make you as happy as they make me, feel free to add some of our fried tortilla chips on the side.

IS TACO SALAD HEALTHY?

Full of protein, fibre, antioxidants and vitamins, this filling salad eliminates the heavy carbs and satisfies the tastebuds with an explosion of Mexican flavour! With healthy ingredients, calories in taco salad are low, making it easy for you to monitor your carb intake while also enjoying what you eat! Because at the end of the day, loving what you eat is essential.

INGREDIENTS

Luckily, we prefer to keep things simple when it comes to quick and easy dishes. So, we opt to use packet spices for this particular recipe, more specifically Mingles taco spice mix, which is packed full of the best Mexican herbs and spices without all of the additives.

This easy taco salad is crisp and zingy, topped with a smooth guacamole mix. Feel free to use our creamy guacamole recipe in replace of the simple iteration in the recipe below.

WHAT DO YOU SERVE WITH TACO SALAD?

You can serve your taco salad with a side of our fried tortilla chips or our Avocado and Salsa. If you’d like a healthy hit of carbs, toss the meat and salad inside one of our flour tortillas.

HOW TO MAKE TACO SALAD

  • Fry: Throw your onion and bell peppers into your pan.
  • Cook: Add your beef, garlic and tomatoes.
  • Season: Sprinkle your chosen seasoning over your meat mixture.
  • Salad: Prepare all of your salad ingredients in a bowl
  • Taco salad: Add your meat to your salad bowl and top with our creamy guacamole.
  • ENJOY!

Easy Taco Salad

Ingredients 
 

TACO MEAT

  • 1 onion finely diced
  • 1 red capsicum/bell pepper diced
  • 1 lb extra lean beef mince
  • 2 teaspoons minced garlic
  • 2 tomatoes diced
  • 1 packet Taco Seasoning Mix
  • 1/4 cup water

SALAD

  • 1 bunch cos lettuce/or lettuce of choice
  • 1 punnet cherry tomatoes, halved
  • 3 oz light mozzarella cheese
  • Any other salad vegetables you like!

GUACAMOLE MIX

  • 1 ripe avocado
  • 4 tablespoons low fat greek yoghurt
  • 1 tablespoon lemon juice
  • salt to season

Instructions 

  • Pan fry onion and red capsicum/bell peppers until onion is soft
  • Add the mince, and cook while stirring until browned, then add your garlic and tomatoes
  • Cook stirring until the tomatoes soften, and sprinkle Taco seasoning over the meat along with the water
  • Cook while stirring, and allow the mix to simmer gently for a further 5 minutes, or until the seasoning is beautifully combined into the meat.
  • Prepare salad in a bowl with salad ingredients, and set aside.
  • Combine the avocado, yoghurt, salt, lemon juice and garlic powder in a smaller bowl, and mash well until mixed through.
  • Add the Taco meat to the salad, and top with the guacamole
  • Enjoy!

Notes

  • Option serve your taco salad with a side of our fried tortilla chips or our avocado salsa.
  • If you’d like a healthy hit of carbs, toss the meat and salad inside one of our flour tortillas.
