THE SECRET TO GOOD PANCAKES
These cinnamon donut pancakes are crazy. Every mouthful is so fluffy and full of buttery, cinnamon flavours, and then you reach the utopia of warm and oozing melted Nutella. For a moment you find yourself with your eyes closed being transported to a chocolate hazelnut haven. So creamy, your mouth waters and yearns for more.
This is what a donut craving looks like for breakfast. The Nutella Stuffed Churro French Toast from so long ago reminded me we needed another donut type of recipe, so with time on my hands and children to feed, experimentation began.
HOW TO MAKE Nutella Stuffed Cinnamon Sugar Donut Pancakes
These pancakes are really easy to make and put a fun spin on dessert in the morning.
Prepare your pancake batter, then pour about 3 tablespoons of batter into a lightly greased nonstick pan to create a base. Spread the batter out gently with the back of your ladle and drop a spoonful of Nutella into the middle. Cover gently with more batter (about 1 tablespoons worth) and let cook for an extra minute.
Flip gently with a spatula once golden brown underneath and continue cooking until pancakes are cooked through.
WHAT TO SERVE WITH DONUT PANCAKES
These are so full of flavour they can be enjoyed on their own or with fresh fruit and berries. They don’t really need any maple syrup or extra spreads, however, there’s no harm in experimenting with different toppings.
They taste exactly like a donut.

Ingredients
Pancakes:
- 1 ½ cups self raising flour
- 1 teaspoon baking powder
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon
- â…“ teaspoon salt
- ¼ cup unsalted butter melted and cooled slightly
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1 ¼ cup milk
- ¼ cup Nutella or any chocolate hazelnut spread
Cinnamon Sugar:
- 4 tablespoons sugar
- 1 teaspoon ground cinnamon
Instructions
- Combine together flour, baking powder, sugar, cinnamon and salt in a large-sized bowl. Make a well in the centre and add the melted butter, egg, vanilla and milk. Slowly whisk well until smooth. Set aside.
- Place Nutella into the microwave for 30 seconds until warm and slightly thinner. Alternatively, place Nutella in a metal bowl over a pot of simmering water (being careful not to have any water touch the Nutella, or it will seize), until melted.
- Heat a nonstick pan over low-medium heat and wipe over with a little butter or oil on a paper towel to lightly grease pan. Pour less than ¼ cup of batter onto the pan and spread out gently with the back of your ladle. Spoon about ½ teaspoon of Nutella onto the centre of the batter, and then gently pour a little pancake batter evenly over the top to cover the Nutella completely. (You can gently seal it with the back of your spoon to ensure no Nutella touches the pan, or your pancakes can burn or stick).
- When the underside is golden, gently flip with a spatula and cook until golden. Repeat with remaining batter and Nutella. (Please note: no bubbles will form on top like normal pancakes, so check the corners before flipping).
- Prepare a wide shallow dish with the cinnamon sugar, and immediately place each pancake onto the cinnamon sugar while they're still warm. Evenly coat both sides, and place onto a serving dish.
- Serve with fruit, ice cream or frozen yoghurt, or enjoy as they are!
