Steak bites were always a YES in my kitchen, but making them in the oven meant way too much cleaning for me. Until I found the way to have a complete meal when you’re in a hurry: the AIR FRYER, these garlic butter steak bites and potatoes are the perfect solution for those busy days. They’re easy, and they’re ready in 20 MINUTES!

Why This Method Is Faster
Steak bites were always really easy to make, but with this method, you don’t have to wonder how long to cook steak bites and potatoes in the oven, or worry about the extra cleanup. You get the same flavour in less time.
The air fryer heats up much faster than a traditional oven and circulates hot air more efficiently. Because it’s a smaller space, the heat surrounds the food quickly, helping the potatoes cook through while the steak gets a nice sear on the outside.
Cooking the potatoes first also helps everything finish at the same time. By the time the steak goes in, the potatoes are already partially cooked, so both can crisp up together in just a few minutes.
In the end, you get tender steak bites, crispy potatoes, and a full meal on the table in about 20 minutes, without waiting for a large oven to heat up.
Ingredients You’ll Need

- Steak. Sirloin or ribeye works best for steak bites because they stay tender and cook quickly in the air fryer. Cutting them into even, bite-sized pieces helps them cook evenly.
- Baby gold potatoes crisp up nicely on the outside while staying soft inside. Quartering them helps them cook faster and at the same rate as the steak.
- Soy sauce & Worcestershire sauce. These add depth and help the steak brown more evenly as it cooks.
- The final toss in melted garlic butter brings everything together and adds that rich, classic steakhouse flavour.

Why Cook Steak Bites and Potatoes in the Air Fryer
Cooking steak bites and potatoes in the air fryer works so well because of how quickly the air fryer heats and circulates hot air. Unlike a traditional oven, which takes longer to preheat and cook food through, the air fryer creates a concentrated cooking environment that helps both the steak and potatoes cook faster and more evenly.
Choosing the right cut of beef also makes a big difference. Tender cuts, such as sirloin or ribeye, work best for steak salad or steak bites because they cook quickly and stay juicy while developing a nice sear on the outside. Similar techniques are used in recipes like Cajun-style steak bites cooked in garlic butter, where small pieces of steak cook quickly while still staying tender.
Another reason this method works is the cooking order. Potatoes naturally take longer to cook than steak, so starting with them first allows them to soften and begin crisping before the steak is added. The same idea of cooking steak and potatoes together is used in foil packet steak and potato dinners, where everything finishes cooking at the same time.
The air fryer also helps speed things up. Because it heats quickly and circulates hot air in a smaller space, both the steak and potatoes cook faster than they would in a traditional oven. The result is steak that sears on the outside while the potatoes start to crisp at the edges. If you like cooking steak with garlic butter flavours, you’ll also find similar combinations in recipes like smashed potatoes with garlic butter and parmesan, which use the same ingredients with different cooking methods.
How To Make Air Fryer Garlic Butter Steak Bites & Potatoes

- Preheat your air fryer to 200°C / 400°F. Toss the quartered baby potatoes with oil, smoked paprika, garlic powder, and salt until they’re evenly coated.

- Add the potatoes to the basket and air fry for 10 minutes.
This gives them the head start they need, so they’re tender inside by the time the steak goes in.
Note: Cook the potatoes first because they take longer, then we add the steak, so everything finishes perfectly at the same time.

- Toss the steak bites with olive oil, soy sauce, Worcestershire sauce, garlic powder, and black pepper.
The soy sauce is your secret weapon here; it helps with browning and gives that “steakhouse” flavour fast.

- Open the basket and push the potatoes to the sides (or give them a quick shake to make space). Add the steak bites in the center in a single layer so they sear instead of steaming.

- Air fry everything together for 6–8 minutes. Check at 6 minutes if you want medium-rare to medium. (Overcooking happens FAST with steak bites.) Transfer everything to a large bowl while hot.

- Mix melted butter, garlic and parsley to create the Garlic Butter Sauce. Pour sauce over the top, and toss immediately. The heat mellows the raw garlic so it turns fragrant, not sharp.
The air fryer works especially well for quick dinners like this because it cooks food fast while still developing good texture. The same idea applies to dishes like sticky teriyaki chicken thighs in the air fryer or crispy, healthier chicken nuggets made in the air fryer follow the same idea of getting big flavour in less time.
ng big flavour in less time.
The air fryer works to simplify almost any recipe. I’ve made everything from brownies to extra crispy buffalo wings baked until golden and crunchy, which are another great option for a simple weeknight dinner.
FAQs
Steak bites usually cook in the air fryer in 6 to 8 minutes at 200°C (400°F), depending on how well done you like your steak. Since the potatoes cook first in this recipe, the steak only needs a few minutes in the air fryer to sear on the outside while staying juicy inside.
Tender cuts like sirloin or ribeye work best for steak bites. They cook quickly, stay juicy, and develop a nice sear when cut into bite-sized pieces. Leaner cuts can work, but they may dry out faster.
You can use stew meat, but it’s not ideal for steak bites. Stew meat usually comes from tougher cuts that are meant to cook slowly. For the best texture, it’s better to use sirloin, ribeye, or another tender cut of beef.

Notes
- Why marinate the steak first
Marinating the steak bites helps season the meat evenly and improves browning during cooking. Ingredients like soy sauce and Worcestershire sauce add flavour while helping the surface of the steak caramelize faster in the air fryer. Because the steak is cut into small pieces, it only needs a short marinade time while the potatoes start cooking. - Cook the potatoes first
Potatoes naturally take longer to cook than steak. Starting them first allows them to soften and begin crisping before the steak is added, so both finish cooking at the same time. - The “Cafe Delites” toss
While everything is still hot, transfer the steak bites and potatoes to a large bowl and pour the melted garlic butter over the top. Toss immediately. The residual heat gently cooks the raw garlic, making it fragrant without turning bitter. - Don’t overcrowd the air fryer
For the best browning, make sure the steak bites are added in a single layer. If the basket is too full, the steak can steam instead of sear.

If I could give this a 10, I would. My husband has been craving a good sirloin and he recently ordered it at a restaurant and was so disappointed. So, I made this for dinner tonight. He said it was the best sirloin he’d ever had.
I am making this recipe this evening. It looks amazing. I noted that the garlic butter recipe is not included on your recipe. I am following the one for your garlic butter, sweet potatoes. Just a note you may want to add the recipe for the garlic butter to the steak bites recipe. Thank you.
Sorry; I should have watched the video….it’s parsley!
What is in the garlic butter to make it green? I see nothing in the recipe!

Made this tonight and it turned out amazing! The steak was tender and the potatoes were perfectly crispy. Cooking the potatoes first really made everything finish at the same time. The garlic butter toss at the end brings everything together. Definitely making this again!
