As you can probably tell by our dulce de Leche churro empanadas, churro ice cream bowl cups and of course our best churros recipe, we are kind of obsessed with churros.

We are obsessed with stuffing things (including our faces), our Nutella Stuffed Deep Dish skillet cookie and our Nutella stuffed churro French toast, which is why we have gone ahead and combined two of our favourite things – chocolate and churros, to bring you this decadent stack of chocolate stuffed churro pancakes!

Pancakes are one of the most versatile breakfasts around, giving us plenty of mouth-watering opportunities to add some of our favourite sweet additions like we did with our Nutella stuffed pancakes and our super fluffy blueberry pancakes.

HOW TO MAKE CHURRO PANCAKES

These easy chocolate stuffed pancakes are so simple to make, just like my Cinnamon Sugar Donut Pancakes, only more indulgent.

Grease your pan well and pour less than 1/4 cup of batter onto the pan. About 3 tablespoons worth is enough to create a base. Spread the batter out gently with the back of your ladle and drop chocolate chips, buttons or melts onto the middle of the batter. Then cover gently and evenly with a little extra pancake batter to cover completely.

WHAT TO MAKE WITH CHOCOLATE STUFFED CHURRO PANCAKES

These fluffy chocolate stuffed churro pancakes have so much flavour, you’ll only need a dollop of ice cream, but for a creamy, tangy kick, try our instant blueberry frozen yoghurt or our dairy free coconut whipped cream.

Chocolate Stuffed Churro Pancakes

Churro flavoured fluffy pancakes stuffed with warm melted chocolate and coated with cinnamon sugar to quench all churro cravings!

Ingredients 
 

Pancakes:

  • 1 1/2 cups self raising flour
  • 1 teaspoon baking powder heaped
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/3 teaspoon salt
  • 1/4 cup butter melted and cooled slightly
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 1/4 cup milk
  • 1/2 cup chocolate chips or buttons

Cinnamon Sugar:

  • 4 tablespoons sugar
  • 1 teaspoon ground cinnamon

Instructions 

  • Combine together flour, baking powder, sugar, cinnamon and salt in a large-sized bowl. Make a well in the centre and add the melted butter, egg, vanilla and milk. Slowly whisk well until smooth. Set aside.
  • Melt a small amount of butter in a nonstick pan over low-medium heat. Pour less than 1/4 cup of batter onto the pan and spread out gently with the back of your ladle. Drop chocolate chips/buttons onto the centre of the batter, and then gently pour a little pancake batter evenly over the top to cover completely.
  • When the underside is golden, gently flip and cook until golden. Repeat with remaining batter and chocolate chips. (Please note: no bubbles will form on top like normal pancakes, so check the corners before flipping).
  • Prepare a wide shallow dish with the cinnamon and sugar. Immediately place each pancake onto the cinnamon sugar while they're still warm. Evenly coat both sides and place onto a serving dish.
  • Serve with fruit, ice cream or frozen yoghurt, or enjoy as they are.

Notes

Tip: Serve with whipped cream and a side of strawberries for an extra decadent brunch dish.
