Cheesy Garlic Roasted Asparagus with mozzarella cheese is the best side dish to any meal! Low Carb, Keto AND the perfect way to get your veggies in!
Even non-asparagus fans LOVE this recipe! Cheesy Garlic Roasted Asparagus tastes absolutely amazing…the whole family gets behind this one.
ROASTED ASPARAGUS
The easiest way to get asparagus into your diet is roasting them. Throw them on a baking sheet or tray and letting the oven work it’s thing. It doesn’t get any easier. But not everyone’s a fan of these green stalks! Coming up with ways for everyone to enjoy them can be a nightmare! That’s where this asparagus recipe comes in! You’re only four main ingredients away from having the best roasted asparagus of your life!
- Asparagus ✓
- Garlic ✓
- Olive oil ✓
- Mozzarella Cheese ✓
HOW TO ROAST ASPARAGUS
- Snap off the woody dry ends of the asparagus. A quicker way when cooking a large bunch like this is to snap the end off one first, then line them all up on your chopping board and slice through the rest at the same length.
- Drizzle with a delicious olive oil/garlic mixture.
- Roast asparagus for only 10 minutes first to avoid over cooking them. Just make sure your oven is preheated!
- Top with mozzarella cheese and broil (or grill)! You could use whatever cheese you have on hand here, preferably a nice mild melting cheese.
All done in less than 15 minutes!

I used parchment paper, which burned, for some reason. However, I caught it in time, took the burnt paper out and it turned out wonderfully, cooking the broccoli for twelve minutes before putting on the cheese for four. I used sharp cheddar and ghost pepper garlic salt seasoning, along with avocado oil. Thanks for the base recipe, though. Had been looking to make my asparagus a bit more tasty and this more than did the trick. Thanks so much!

The white asparagus is so popular in Alsace isn’t spring…..yummy…just the thought takes me back there.

So is the nutritional info for four servings or for six. The size and macros would change quite a bit if I divide into four but it’s actually 1 of 6 servings.
Kat says
Made this tonight wish I had doubled the recipe as it was gone before I could have seconds!

I use the nutritional USDA serving amount on all my information. Hope that helps!

Looks fantastic! How do I get the garlic all smooth and creamy-looking like that? I’ve minced garlic before but it comes out just little pieces not liquidy like in your video.
Karina says
Thank you! I sometimes like to use a garlic paste that you can purchase in the produce section by the lettuce. It makes it a little smoother to use and easier to spread. Hope you enjoy your roasted asparagus! They are delicious!
Janet says
I so love these receipes
Jessica says
I made this with a little adjustment. I didn’t have fresh garlic on hand so I used garlic power, and I brushed the olive oil mixture on. I didn’t use as much cheese as I should have, which I will remedy next time. This is so easy and delicious, and looks kind of fancy even though it’s such a simple recipe. I am now obsessed with cheesy asparagus and will make it ALL THE TIME.
Bev says
Made this for Easter dinner. It was a hit with everyone! So good and so, so easy and quick.
Joyce says
