Classic Churro flavours meet with pancakes to make the most delicious and fluffy chocolate stuffed Churro Pancakes recipe!
Let me apologise in advance for doing this to you. Mainly for allowing you decide which one is better: Nutella or chocolate stuffed pancakes because we couldn’t decide! The flavour in these pancakes is just incredible.
Also, who doesn’t love a good Churro with a surprise gift included inside? You’re welcome.
Due to the fact that Churro Pancakes aren’t enough it seems, we apparently needed to stuff them like we’ve stuffed everything else lately, including our faces. Like these Nutella Stuffed Churro French Toast from months ago. Our readers are in love with Churro flavoured everything. Case in point, this giant Churro Skillet Cookie has had a total meltdown on my site just like this Nutella Stuffed Chocolate Chip Skillet Cookie.
HOW TO MAKE CHURRO PANCAKES
These pancakes are simple to make, just like my Cinnamon Sugar Donut Pancakes, only on a whole other level of incredible flavour and texture.
Make sure you pan is greased well, then pour less than 1/4 cup of batter onto the pan. About 3 tablespoons worth is enough to create a base. Spread the batter out gently with the back of your ladle and drop chocolate chips, buttons or melts onto the middle of the batter. Then cover gently and evenly with a little extra pancake batter to cover completely.
BETTER THAN RESTAURANT PANCAKES
When you become a first hand witness to the melting chocolate flowing out of a pancake coated in Cinnamon Sugar that tastes just like a Churro, please share the experience and let me know. It’s a feeling like never before, a sensual one.
The fluffiest most perfect, buttery pancakes turned into a Churro for breakfast? YES. These are perfect for a weekend breakfast or dessert.
Oozing chocolate.
Chocolate Stuffed Churro Pancakes
Ingredients
Pancakes:
- 1 1/2 cups self raising flour
- 1 heaping teaspoon baking powder
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1/3 teaspoon salt
- 1/4 cup butter, melted and cooled slightly
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1 1/4 cup milk
- 1/2 cup chocolate chips/buttons
Cinnamon Sugar:
- 4 tablespoons sugar of choice
- 1 teaspoon ground cinnamon
Instructions
- Combine together flour, baking powder, sugar, cinnamon and salt in a large-sized bowl. Make a well in the centre and add the melted butter, egg, vanilla and milk. Slowly whisk well until smooth. Set aside.
- Melt a small amount of butter in a nonstick pan over low-medium heat. Pour less than 1/4 cup of batter onto the pan and spread out gently with the back of your ladle. Drop chocolate chips/buttons onto the centre of the batter, and then gently pour a little pancake batter evenly over the top to cover completely.
- When the underside is golden, gently flip and cook until golden. Repeat with remaining batter and chocolate chips. (Please note: no bubbles will form on top like normal pancakes, so check the corners before flipping).
- Prepare a wide shallow dish with the cinnamon and sugar. Immediately place each pancake onto the cinnamon sugar while they're still warm. Evenly coat both sides and place onto a serving dish.
- Serve with fruit, ice cream or frozen yoghurt, or enjoy as they are.
