Corn Casserole with your choice of cheese and chives to serve on your holiday table. You will love how easy this is to make! Everyone will be asking you for the recipe.
CORN CASSEROLE
Corn Casserole is buttery and creamy on the inside, with a soft golden crust and optional cheese on top. A casserole that belongs on your Thanksgiving dinner table next to Roast Turkey or Slow Cooker Turkey, Mashed Potatoes, Mashed Cauliflower, Roasted Carrots, Green Bean Casserole, Stuffing, Dinner Rolls, Brussels Sprouts…the list goes on!
A staple at most American dinner tables and pretty much the easiest side dish you can make — well besides cheesy green beans.
HOW TO MAKE CORN CASSEROLE
If you’ve never tried homemade corn casserole before, you are going to fall in love with how quick, easy and delicious this buttery casserole is.
I wasn’t kidding when I said 5 ingredients is all you need:
- Jiffy cornbread muffin mix
- Corn kernels (fresh, frozen or canned)
- Creamed corn
- Sour cream
- Melted butter
Prepare it in advance, cover and refrigerate it so you can bake it on the BIG day!
WHAT DOES CORN CASSEROLE TASTE LIKE
The creamed corn shines through in this recipe with a hint of sweetness, mixed with a buttery flavour thanks to the sour cream. Its texture is similar to that of a corn soufflé but not as fluffy or high as one.
The thing is, when you first pull it out of the oven, you expect a cake as it looks like one, but it is so soft and creamy on the inside, just as a pudding should be.
ADDITIONAL INGREDIENTS:
Cheese — Mozzarella, Cheddar, Provolone or Monterey Jack work really well here and taste amazing with this casserole.
Chives — or sliced green onions.
Herbs — Rosemary, thyme or parsley are popular choices.
Bacon — If serving with bacon, you can fry it up while the corn casserole is in the oven and sprinkle it over the top when its done. You could also mix the bacon into the batter if you want bacon pieces on the inside.

Looks great. Will try this. I’m assuming you use canned creamed corn. If so, any particular brand or do you make your own creamed corn? Happy Holidays.
Karina says
At this time I do not have a particular brand that I use. Any brand will work great! Thanks for choosing one of my recipes! Enjoy! XO

Hi Karina,
Looks like a nice recipe I would like to try, but the Jiffy Corn Muffin Mix has me stumped. Where here in Australia can we buy it?
Cheers,
John
Karina says
I usually find it in the baking isle near the muffin mixes. If you are not able to find it, amazon usually is able to ship it to you. I have found it in local grocery stores though. Thanks so much for choosing one of my recipes! XO

Hi, would love to try your corn casserole…something different. Unfortunately we don’t have the instant muffin mix. Can you please give me a recipe using normal corn meal.
Cheers
Anne Wratten (Australia)
Karina says
The muffin mix is located by the muffins on the baking isle or amazon usually has it to ship to you. I am sorry it is hard to find for you. At this time I do not have a recipe with corn meal. You are welcome to substitute it for the muffin mix if you would like to try that. Thanks for following along with me! XO

It’s easy to make the corn casserole a main vegetarian entree. Saute whatever veggies you want until almost cooked. Then add then to the basic recipe.
It may need to bake longer before it’s fully set.
BARBARA QUINTANA says
Can I use
cornbread mix in place of jiffy muffin mix. How much?
Karina says
Yes, that will work too! Thanks for asking and using one of my recipes! XO
