Flourless and wholesome, peanut butter and jam Nutella banana blondies have the same consistency as our Banana Blondies but with a twist. Sticky centres with swirls of jam and Nutella texture throughout, the perfect treat or filling snack when the craving hits.

I know I’m not the only one that stands over the kitchen sink smearing peanut butter on one side of a banana, and then smear Nutella on the other side to justify it as a healthy snack because it’s a banana? I feel like I’m at confession because the peanut butter and Nutella somehow don’t count.

Incredibly easy to make, this spin on chickpea blondies is an extremely forgiving and fool-proof recipe that takes minutes to make with easy to find minimal ingredients and a food processor.

Just throw your ingredients into your processor, fold through some chocolate chips and pour the batter into a baking tray lined with parchment paper. Top with more chocolate and bake in the oven. DONE! Peanut butter and jam Nutella banana blondies ready in less than half an hour.

substitutions

Canned chickpeas are used in this recipe, but you can use precooked/boiled chickpeas (also known as garbanzo beans).

I love using peanut butter in this recipe but you can substitute it with a nut butter of your choosing. Natural cashew butter, almond butter or hazelnut butter will work.

Honey adds sweetness and make these chickpea blondies super fudgy. Alternatively, you can use the same quantity of pure maple syrup or any other sweetened syrup.

Rolled oats add texture and structure. Use almond flour or plain/all-purpose flour.

Peanut Butter and Jam Nutella Banana Blondies

Ingredients 
 

  • 2 medium ripe bananas
  • 1 cup rolled oats
  • 1 cup peanut butter
  • 12 oz canned chickpeas drained and rinsed
  • 1 teaspoon baking powder
  • 2 tablespoons brown sugar
  • 1/4 cup sugar or sweetener of choice
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 4 teaspoons Nutella or any hazelnut cacao spread
  • 9 teaspoons strawberry jelly/jam

Instructions 

  • Preheat oven 200°C | 390°F. Lightly grease an 8x8-inch baking pan with cooking spray, wipe excess over with a paper towel and set aside.
  • Throw ALL ingredients (except the nutella and jam) into a food processor and blend until smooth (about 5 minutes, depending on your food processor)

  • Pour into a prepared pan and spoon jam and nutella evenly over batter.

  • With the back of a spatula of knife, swirl both spreads into the batter and over the top until the surface is covered.

  • Bake for approx 25-30 minutes (depending on your oven) until a toothpick inserted into the centre comes out semi-clean. (The dirtier the toothpick, the richer the bars)
  • Once cooled, gently cut into 16 bars.

Notes

They are VERY moist when taken out of the oven, but they will set and firm as they cool! Don't over cook these or they will become dry.

    I made them today they were so good.. I used only 3/4 cup peanut flour that I’ve made at home instead of one cup..and on the top I put jam and 3 teadspoon peanut butter instead of chocolate… And I omitted the 1/4 cup natural sugar.. I only put 2 tbs of honey..
    But I wanted to ask u.. The taste of the chick peas is strong.. How can I get rid of it? Or reduce its taste at least! I put some vanilla but i didnt taste it at all..

      It’s hard to say when the original recipes ingredients have been substituted by a lot. When I made the original recipe as written here, the chickpea flavor is well hidden. My ink advice is to follow the recipe as much as you can without making too many changes to ensure the best ‘tested’ result!

      It’s fine to use the same amount of peanut butter! Or lower the amount to 3/4 cup for a lesser fats amount if that’s a concern
