Homemade pizza was always a favorite at home, but to be honest, I don’t always have the time to make it the classic way. So I tried this instead. This air fryer tortilla pizza is EASY and QUICK to make, with all the flavor of a real pizza in just 10 minutes.

Now, my version has a little twist, and if you love stuffed crust like I do, you’ll keep this one on repeat.

Scrolling on social media always makes me want to try something new. I was looking for an easy recipe to make since my kids were away and I was home alone, and I kept seeing this viral tortilla pizza everywhere. Of course, I had to try it… But my way.

I immediately texted my daughter, and just like that, it became dinner the next day. In less than 30 minutes, the whole family had their own personal pizza, movie night was on, and it turned into one of those simple moments you want to repeat.

The best part? You can add WHATEVER you want. Your favorite pizza topping in your preferred amount. No two pizzas are ever the same, and you still get a crispy, perfect size pizza that keeps you satisfied every single time. No classic bake needs it.

  • Toppings (Pepperoni, Chorizo, Tomatoes, etc.): This is where you make it your own. Just keep it balanced, too many toppings can weigh the tortilla down and stop it from getting crispy. A mix of something savory + something fresh works best.

    You can keep it simple or go all in. Chicken works perfectly if you want something lighter, while turkey pepperonis are a great quick option with lots of flavor. If you’re craving something more filling, a meat-lovers version with a mix of proteins is always a win.

  1. This is the fun part. Start building your toppings with a base. I like using pesto, but you can also use tomato sauce or tomato pesto. Choose your favorite pasta sauce.

  1. Add mozzarella cheese, then layer your favorite toppings. For a heartier version, you can add ham or beef. You can also include tomatoes, mushrooms or bell pepper. This is where you can really make it your own.

  1. For a golden, crispy crust, lightly brush the outside with egg wash. This step is completely optional.

  1. Carefully transfer the tortilla to the air fryer basket. Sprinkle a little oregano around the crust for extra flavor before cooking.

  1. Air fry at 380°F (190°C) for 7–10 minutes. You’ll know it’s ready when the crust is golden and crispy.

Tips For The Best Tortilla Pizza Every Time

Getting this tortilla pizza just right comes down to a few small details that make a big difference in texture and flavor.

Using large tortillas helps create enough space to fold and seal the edges properly without tearing. If the tortilla is too small, it can be harder to hold the filling in place while cooking.

If you’re using an oven instead of an air fryer, place the tortilla on a hot baking sheet so the base starts crisping immediately. You can also finish it under the broiler for a minute or two to get extra color on top.

A toaster oven works just as well for smaller portions. It gives you a similar result without needing to heat a full oven, making it perfect for quick snacks or single servings.

For storing leftovers, place them in an airtight container and keep them in the refrigerator for up to 3 days. When reheating, use the oven or air fryer instead of the microwave to bring back the texture.

Ingredients 
 

  • 1 large flour tortilla can use low carb or wholemeal tortilla
  • 3 mozzarella string cheese sticks
  • 2 tbsp pesto sun dried tomato or basil pesto
  • 3 slices pepperoni chorizo or any meat or veggies
  • 3 cherry tomatoes halved
  • Oregano dry, pinch
  • 1/3 cup shredded light mozzarella can use any type of cheese and topping you want

Optional:

  • egg wash
  • sesame seeds
  • fresh basil

Instructions 

  • Place the tortilla on a plate and arrange 3 string cheese sticks along the edges to form a triangle.

  • Secure the shape with 3 toothpicks
  • Spread pesto in the center.

  • For spreading, you can use whatever you want, like basic pizza sauce or sour cream, even cottage cheese!
  • Add all your favorite toppings! mozzarella, pepperoni, and tomatoes.

  • For a TWIST on the classic pizza, you can add an egg right in the middle! No worries, it's going to cook in the Airfryer
  • Brush the edges with egg wash.

  • Carefully transfer to the air fryer basket and cook at 380°F (190°C)

  • Cooking time is around 7–10 minutes. After the first 7 minutes, check the pizza crusts! Do not rush this part for a cheesy finish.
  • Remove the toothpicks, finish with fresh basil if using, and serve warm.

Notes

One of the most common mistakes is adding too many toppings. While it’s tempting to load it up, too much moisture can prevent the tortilla from crisping properly. Keep your toppings light so the base holds its shape and cooks evenly.
If your tortilla isn’t crisping enough, it usually comes down to airflow and heat. Make sure it sits flat in the air fryer basket and isn’t overcrowded. Preheating also makes a difference in getting that quick, even cook.
The cheese-stuffed edges need to be sealed well. If they open while cooking, the cheese can melt out too quickly. Rolling the tortilla tightly over the cheese and securing it properly helps maintain the shape.
For best texture:
• Use low moisture mozzarella so it melts without releasing too much liquid
• Slice ingredients like tomatoes thin to avoid excess water
• Don’t skip the egg wash if you want a more structured crust
If you’re using a different cooking method, the same concept applies. In the oven, place it on a preheated tray so the bottom starts crisping immediately. A skillet can also work, but cook on medium heat and cover briefly to melt the cheese without burning the base.
