Every single Sunday begins with pancakes… and ends with leftover pancakes from the morning. These are everything you want in a pancake. They’re soft and so fluffy… each mouthful melts in your mouth… you’ll be reaching for more than one. Stack. Possibly.
How To Make The Best Fluffy Pancakes
It all starts with the batter. Too thick and they will be gluggy and undercooked on the inside. Too runny, and the pancakes will spread out and won’t fluff up. I like to test the batter with my spoon or ladle, lifting it gently above the rim of the bowl. It has to be thick BUT able to run slowly and nicely off of the spoon. A couple of lumps is okay, but I do like to smooth out my batter as much as I can gently with a wire whisk.
How To Cook Perfect Pancakes
- Preheat your good quality, non stick pan or griddle on medium heat first. Once it’s hot, lower the heat down to low-medium heat. Wait about two minutes. This part is crucial and so worth it. Lightly grease the pan with a small amount of butter (yes, even on non stick pans), and wipe away any excess butter with a sheet of paper towel.
- Use a 1/4 cup measuring cup to pour your batter so you get perfect, evenly sized pancakes. Start pouring from the middle, then continue pouring slowly in a circular motion so that the batter spreads into perfect round shapes.
- Allow the pancakes to cook properly! Don’t rush them on high heat, or flip them too early. Let that under-side cook to a beautiful golden brown colour, and when bubbles start forming on top and around the surface (batter side), they are ready to flip.
- How to get that flip perfected without creating lopsided pancakes? Grab a good, plastic spatula and slide it underneath the pancake. Use your WRIST to gently flip them instead of using your whole arm. You’ll know what I mean when you’re in front of your pan ready to flip. THIS makes a HUGE difference.

Ingredients
- 2 cups all purpose | plain flour, (290 g | 10 oz)
- 1/4 cup granulated sugar or sweetener, (60g | 2 oz)
- 4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cups milk, (440ml)
- 1/4 cup butter, (60g | 2 oz)
- 2 teaspoons pure vanilla extract
- 1 large egg
Instructions
- Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Make a well in the centre and add the milk, slightly cooled melted butter, vanilla and egg.
- Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there may be a couple of lumps but that's okay).(The batter will be thick and creamy in consistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple tablespoons of extra milk into the batter at a time until reaching desired consistency).
- Set the batter aside and allow to rest while heating up your pan or griddle.
- Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.
- When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
- Serve with honey, maple syrup, fruit, ice cream or frozen yoghurt, or enjoy plain!

Ok this recipe stays true to the title BUT I recommend that instead of 1/4 cup sugar use 2/4 cup to add a little more sweet and instead of 2 teaspoons of vanilla I used 2 1/2 tablespoons of vanilla because when I tasted the first off the pan I didn’t quite taste the vanilla or sweet. But overall a very scrumptious dish.

Everyone is sick with zero appetite in my home. My little has been taking a few bites of food for the last few days, but really isn’t getting nutrients or having full meals. I modified the recipe to add a little more protein… added flaxseed, ripple milk and an extra egg. Every single pancake was eaten. The pancakes are like magical little pillows of comfort. This recipe is so good! I made them vegan and to do so, replaced the butter with non-dairy butter, the milk with almond milk, and the egg with 1/4 cup aquafaba aka chickpea juice. (1 egg = 1/4 cup aquafaba). DELICIOUS! I also doubled the amount of butter that was called for and added blueberries. They turned out so good and even my non-vegan boyfriend loved them.

Truly the best I’ve made. We used homemade almond milk and non-dairy butter and added a dash of pumpkin pie spice. My boyfriend and I loved the light texture and flavor. So easy. And the tip to preheat and butter then wipe the pan is a step I’ve never taken, but apparently adds some magic. Next batch I may try full vegan and use a flax egg to see how that goes. Honestly, not a huge pancake kinda gal and my hubby isn’t either, but there is something magical about these pancakes (I think it has to do with the amount of sugar/baking powder in this recipe) but these pancakes are AMAZING … I’ve had them 2 days in a row and the batter almost seems better on day 2 (only used half the batter the first day and refrigerated the rest)

We ran out of store bought pancake mix, which is the only way I’ve ever made pancakes. My kids really wanted them today so I googled pancake mix. This was riddled with 5 star reviews and didn’t require buttermilk! WIN! I started making this when I realized I didn’t have enough baking powder but another quick Google search taught me I could mix baking soda with lemon juice, so I did. My milk was very slushy from defrosting and when I mixed it with my melted butter it made the butter hard again. It was one thing after another attempting to make this mix and I was pretty sure this was going to be another one of my mom fails but it was NOT. My very vocal 13yr old son declared these to be the BEST pancakes he’s ever had, and he’s had A LOT of them in his years. We’re saving this and I may have to stop buying store mix as this want difficult ( as long a you have the ingredients that is)

HOLY MOLY. This is going straight into my recipe folder and I’m already excited to make more. We decided to do Christmas Breakfast-for-dinner this year and found your recipe. My ADHD 6 year old son did all the measuring and mixing with no issue– that’s how easy it is!
The only thing I changed is that I cut the sugar in half, simply because I planned on adding chocolate chips (which I then forgot lol).
Low and slow is the way to go with this one. This recipe yielded 10 decent-sized thick pancakes, which was perfect for 3 people. Cooking took about 5 mins per pancake with the heat on medium-low. They turned out picture perfect and tasted so good; I didn’t manage to snap a pic before they were gone.

For those plant-based and/or gluten free, I subbed egg for bobs red mill egg replacer, the flour I used bobs 1to1 gluten free flour, and for butter I used Miyokos, and for milk I used 4 ingredient oat milk. Best pancake receipe I’ve found online!!! Absolutely delicious, and this receipe has become my go-to for whenever I’m craving pancakes. With just one batch I was able to make 8 pancakes and I added heath bar candies to a couple of the pancakes. It tasted so good! I look forward to adding blueberries or nuts next time.

This is a foolproof recipe!! I only had self raising flour and whole meal flour in the cupboard so I used one cup of each and it worked out just fine!!
I would recommend to use a smaller measurement for the pancake batter though, as I found the ¼ cup was perhaps a bit too thick to be cooked thoroughly without burning a bit!

So good and so simple, never buying a box again. I added a little extra vanilla (Mexican vanilla is the best) and just a shake of cinnamon. I also found that pouring the cold milk into the warm butter gave me wonderful little flakes of butter in the batter. 325 degrees was good – my griddle does not have medium.

IF this recipe doesn’t forever have a 100% approval rate with an A+ & 5 stars, I’ll truly believe the reviewer substituted ingredients then blamed the author for it not turning out.
I’m a HUGE fan of making recipes my own by tweeking ingredients …. BUT .. I’m not a well established pancake maker which was a bummer because I do love them & it takes effort to brush your teeth & put on “real clothes” to go into town & buy an order from the restaurant full of people that it’s way too early to handle. Sooo, my internet search has been on. For. YEARS. Until now!
I intended to follow the recipe exactly but alas “too early”. I forgot to add the egg until I poured the batter for the 1st pancake. It came out really well! But I realized the batter was a bit thick. So if you’re not an egg person, simply omit with spot on results 🙂 I did whisk an egg in the measuring cup I’d used & quickly folded it into the remaining batter. The rest of the pancakes turned out picture perfect! I also didn’t have milk. I had an open can of evaporated milk & A full carton of cashew milk so I mixed 3/4c evaporated with 1c cashew milk. AMAZING! I really love that this recipe isn’t made with buttermilk. I don’t love the taste so I literally only use it in 1 chocolate cake recipe I make once a year for a birthday. To me, buttermilk is a wasted product & I’m not a fan of waste. I truly believe this recipe would work really well with your choice of milk (plant based included).

Followed this recipe (almost) exactly. The recipe emphasizes the importance of making sure the batter runs freely off the mixing tool, not too thick, nor too thin, which is spot-on advice, BUT I had to add at least a 1/2 cup more milk (I actually used light cream – 10%bf – because I’d run out of milk ;-), a few tablespoons at a time, mixing thoroughly in between, until I KNEW it was the right consistency to run freely out of the 1/4cup measure onto the pan.. Long story short, this ‘BEST Fluffiest’pancakes recipe lived up to its billing as, to my taste, the resulting pancakes are on-par with the best I’ve ever had, being Fluffy, for sure, AND MOIST, as well – which, to me, is EQUALLY important in a gourmet-class pancake. This recipe truly delivers on both counts AND the just-right vanilla-sugar TASTE is devine. This recipe is now my Go-To.. can’t imagine anything better!!!

I made this a few days ago and it was deliciously fluffy! The only thing I changed was reducing the sugar to about a couple tablespoons. The rest, I followed as per the recipe.
I also froze them individually by wrapping in baking papers and they reheat well in the microwave using the defrost setting for a few minutes. My hubby and toddler love it! So delicious when eaten with honey.

i never leave reviews, but these were the best ive ever had!!!! im pretty young and not the best at cooking, and these are pretty foolproof. a lot of the substitutes work well. i didnt have butter on hand, so i used Imperial butter (50% vegetable oil) and they turned out soooo good! i also used some leftover frozen fruit. i was surprised that i was able to make that, to tell the truth. will be my go-to recipe from now on!!

Recipe is good overall but please fix your Imperial-to-SI conversions for flour and milk. Luckily, although both are wrong, they’re both wrong proportionately and in the same direction.
Two cups of flour should be 240 grams, not 290 grams. One and 3/4 cup milk should be around 410 grams (413) not 440 grams.

I needed to use some whole wheat flour so I substituted half of the white flour for King Arthur whole wheat flour and added a frozen thawed banana to help with moisture. I also added chocolate chips. They were so good. The texture was wonderful. I even wrote down to save the recipe.

I’ve been looking for a good pancake recipe forever, but all of the five star recipes that I’ve tried are too flat and didn’t have enough flavor. When I tried this recipe, I expected it to be the same way, but when I ripped open my pancake it was huge and fluffy and smelled like heaven in a pancake. It also has great flavor! Tip: if you make scrambled eggs to go with these add a pinch of sugar to make them taste more like eggs out of a restaurant. You can still add pepper and salt with the sugar.

Came across this recipe and double-checked the metric measurements online before trying it. I made adjustments according to the metric measurements for each ingredient online and made it. Husband loved it!!!! Wonderfully fluffy!!! This is the only pancake recipe I’ll use from now (with the adjustments).
I personally hate using cups and spoons as measurements. So inaccurate. Every time you use “a cup” of flour, its weight changes depending on how you scooped it. I’m not a good cook so I need the accuracy.

This really is the best pancake recipe I’ve ever used. I use it all the time. I’ve frozen the batter before to use on a camping trip and the oancakes came out perfect. I freeze the pancakes all the time to feed to my kids. I reheat them in the toaster and they taste delicious even after freezing. I’ve tried with milk alternatives and they still come out great.

I tweaked this recipe according to my own taste. They came out perfect and fluffier than my overgrown Yorky. They taste even better when the mix has set overnight in the fridge. My wife said (this was BEFORE letting the rest set overnight) that these were the best pancakes she ever had. Even better than a local breakfast place that is famous for their pancakes. In fact, she ate them with no extra butter or maple syrup. I’m usually unsatisfied with my own cooking, as I tend to be very critical.

Today, I tried your pancake recipe, and it was a hit! Normally, my pancakes come out kinda dense and boring, but the pancakes with this recipe came out fluffy as promised. I was worried the pancakes would not come out as good because I didn’t have enough ingredients. I had to add 1/2 cup of almond flour to complete the 2 cups of flour for the recipe, and used black sugar because I didn’t have regular sugar. I also used soy milk instead of cow’s milk. Well, that seemed to not have affected the recipe one bit. I definitely plan on using this recipe from now on, and I’m looking forward to try it with chocolate chips, blueberries or strawberries. Best recipe for pancakes ever!
I toss all of the ingredients together in my mixer except for the milk and butter. Heat the 1 3/4 cups of milk in the microwave, once warm just keep adding in butter until it measures to 2 cups, easy way to get your quarter cup of butter in there. Then I stir the butter and it melts as it cools the milk down. Add that to your ingredients and let your mixer do the rest.
My family likes me to add in two ripe bananas with a tiny bit more flour to thicken the additional liquid. I use home made vanilla. So good!

Gave 5 stars because I don’t wanna lower the overall rating of the recipe based on what’s probably a mistake on my part, but I tried these today and had to pour the batter down the toilet cause it didn’t work at all. The batter was completely liquid with little yellow lumps running throughout that wouldn’t dissolve no matter how hard I mixed. I even used an electrical hand mixer in an act of desperation and the batter was still liquid and lumpy. I followed the instructions to a T and I’ve made plenty of batches of pancakes before so I’m honestly mistified as to what could have possibly gone wrong here. Anyone has experienced anything like this or has any tips as to how to avoid it happening again? Thanks!

I’m 50 and this is my first public comment ever, that’s how happy I am that I FINALLY found the perfect pancake recipe! My pancakes always came out too done on the outside but raw in the middle but not these! I heated my griddle as suggested, turned the temp down and waited 2 mins. I also, wiped the excess butter off. I really think that helped. I didn’t have those awkward first couple of burnt pancakes. They were golden and fluffy inside, not gooey! Thank you!

I’ve made these pancakes 10 or so times. They are always amazing. Fluffy and light, great with lots of butter and maple syrup. Taste is as good as it can get.
I’ve made some tweaks for my family’s personal preferences. Here they are:
– on the 24 pancakes, I use 4 cups vice 3.5 cups of milk
– also on the 24 pancakes, I add ab out a quarter cup of water
– with the resulting thickness from the above changes I use a fairly low heat setting (Med Low on my electric skillet) so they don’t get too browned waiting for the middle to cook

These pancakes were so good and also so easy to make! Because the batter wasn’t thick (mine was actually a little runny probably because I mixed it again when I found a glop of egg), it all cooked perfectly though not as fluffy as I think it was supposed to be. No undercooked middle! The vanilla and sugar in it make it so I don’t need to add syrup on it. The taste reminds me of the egg waffles/egg cakes I used to get from those carts on the streets of NYC’s Chinatown. Pancake recipes I’ve tried before are usually dense and cake-y but lacking in flavor. This is THE recipe; no more searching!

I rarely crave pancakes (maybe once or twice a year), so when I woke up craving them today, I started Googling for a recipe and found this one. I had to use monkfruit instead of sugar, but otherwise followed the recipe exactly and they were perfect! To my amazement, I actually loved these so much that not only have I bookmarked the recipe, but I have permanently added it to my recipe file–something I NEVER thought I would do with a pancake recipe!

I replace half the flour with baby cereals enriched with iron ( Gerber rice here) , put maple sugar instead of granulated sugar and I make double recipe, cook the pancakes size of a bread slice so I can freeze them with parchemin paper between each of them and use it later in the toaster for hurry mornings with the kids! They really enjoy it and Mommy too! 🙂

I forgot the Oil but that’s okay because batter might have been too Liquidly if I added (I just cooked with a bit more oil) I added a tsp less baking powder, I blended everything together besides the Flour, then whisked in to the flour and let rest to Thicken a little, I used 1/3 Pancake batter for a Pancake!! Tried making the fluffy pancake recipe and adjusted the portion size from 12 to 3 people. FYI the cups etc adjust on the let hand size but the ml listed after the ingredients don’t which resulted in having to discard the entire portion. Best to not mention the millilitres in recipes if they don’t adjust as we in Canada are used to adjusting from cups to millilitres or grams if necessary.

To boost the fluffiness, I added a couple tsp of lemon juice and separated the egg, whipped the egg white and folded it in just before baking. My husband, who prefers waffles to pancakes, said these were the best ever.

One trick I learned as a short order cook is to flip them back a second time to crisp up the tops. This gives the pancake a little crust and stops it from getting too soggy, too quickly. Can’t wait to make these.

Tried this recipe for the 1st time after forgetting I ran out of the store bought pancake mix. I halfed the recipe still using 1 egg and they turned out freaking amazing!!! My husband and I have been married for 12 years and are polar opposites 😆 however we both strongly agree pre-made pancake better is ALWAYS better than store bought. We never understood the hope others have of homemade pancakes. For us store the premix just tasted better. However I have tried countless homemade recipes over the years to try and find one to replace the store bought mix. 12+ years in and we have never been convinced… that was until this morning! I didn’t have pancake mix on hand (another reason I’m looking for a homemade recipe). A quick search on Google and the recipe is the first to pop up. I whip it together fully expecting it’s gonna be a one time recipe. One we enjoyed once but never look back. But was I wrong 😑 we all loved them! Help! I used to make this all the time as directed and they were PERFECT. But the last three times they’ve been super runny and watery. For the life of me I cannot figure out why. Not really sure what could be causing them to go runny, but I’d recommend just using less liquid and ensuring the batter sits for awhile to allow it to thicken before cooking. Make sure the oil/butter in the pan is hot before putting in the batter. Batter on top of cold oil wil just spread instead of starting cooking when added. I hope this helps.

PS in case it’s helpful for anyone, second time I ran out of baking powder so subbed 1 teaspoon baking soda total (1 teaspoon baking powder = 1/4 teaspoon baking soda) + 2 teaspoons apple cider vinegar total (1 teaspoon baking powder = 1/2 teaspoon vinegar). They turned out perfectly and we couldn’t taste the vinegar.

My pancakes came out amazing! I used Bob’s Red Mill GF 1 to1 flour and 1% milk. If I have Monkfruit sweetener on hand I prefer that also. If I have buttermilk on hand I will use that next time. Always make sure your baking soda and baking powder are fresh and not expired. Expired products will change the outcome. I made the batter the night before and it was easy to make pancakes for my grandson and husband the following morning.

I cook all of the pancakes and whatever is left I let cool, stack with waxed paper in between each and throw them in a freezer bag. I made them last night and out of a double batch only 5 made it to the freezer. (Kids are home from college-they love them with chocolate chips!).

I have a toaster oven, so I put them in there and toast them like I do bread…. they turn out great. I’m sure you could put them in the microwave too, they just wouldn’t be crispy on the outside.

I did need to add extra milk right at the beginning, because it looked thick. And I let the batter “rest” for a few minutes to activate the baking powder and get those bubbles in the batter!

Yes you can. No different than a mix or bisquick. After mixing dry ingredients measure the final amount. Then you can mix up several batches at one time and put into air tight container. Just don’t store longer then when your ingredients would expire. Learned this in Home Economics in 1977.

I’m 55 years old…have 3 grown kids and have always made pancakes from scratch – just never liked the mixes at all, had used a recipe handed down to me from my mom – but they just never seemed to be “fluffy” enough for me – although they were delicious! But these? Light, fluffy, flavorful – literally yields the perfect pancake! I always made mine too big in the past which made them harder to flip – but your 1/4 cup size is just the right measurement! I did add a couple extra splashes of milk (as per your advice) as the batter was very thick and I had a hard time getting it to pour out of the cup – but they were STILL extremely light and fluffy – thank you so much for posting! I am very picky when it comes to pancakes! This is my go to recipe! For my famines criticizing pallet I tried it two ways, with & without buttermilk. My family prefers buttermilk so I follow the directions exactly with exception to buttermilk. Because the buttermilk is so thick, I thin it out with milk. They still turn out amazingly fluffy!! When it comes to cooking, slow & steady is the way to go for sure! I cook them with butter & a 1/4 tsp of cooking oil. It comes out perfectly fluffy they a slightly crisp edge! Absolute perfection!! True be told, I expected a troublesome battle trying to cook these. Most fluffy pancake recipes I’ve tried have a hard time getting cooked in the middle while the outsides are burning. I always disliked baking powder tasting pancakes but you barely even know it’s there! Honestly, I’ve never been a huge pancake fan, but now I am! I’ve written this down in my family’s recipe book, now who knows how long we’ll be making these.
Putting melted butter in it was a great idea, so flavorful….

Not condensed milk, too thick and sweet. I tried them today using evaporated milk as I was low on regular milk. Turned out beautifully. My son (who has eaten his share of pancakes!) said they were the best he’s ever had. Take that for what it’s worth coming from a 10-year old.

I wouldn’t use condensed milk as it’s extremely sweet & thick. I did use evaporated milk when I made this recipe. It can be substitute for fresh milk in nearly everything. Ours were unbelievably delicious!

I made pancakes using this recipe but substituted plain flour with breadfruit flour. You can also use sweet potato flour or cassava flour. They came out very fluffy, soft, light and very tasty.

I made these this morning and my boys loved them! I have one question though, watching your video I noticed that after you flip them they puff up. Mine didn’t do that. Any idea why? Only thing I did differently is add blueberries and chocolate chips after I poured the batter on the pan (one child prefers chocolate chip pancakes and the other prefers blueberry pancakes 😁). My best bet is that your baking powder has lost it power. If you have older baking powder, get fresh. It makes a difference. The fresher the better. I didn’t know that until after I was 40.

Funny how many new reviews there are. I made these today and they were incredible! I’ve managed to run out of vanilla extract for the first time in my life and had to use almond extract. My whole family thinks they taste like fresh French almond croissants. I also used almond milk.

I have had a lot of time on my hands to make home-cooked food. The night before, I put all the dry ingredients in a ziplock bag and the next day I just mixed in the wet with the dry. I subbed oil for butter (ran out) and they still were nice. First time making pancakes and these were amazing! Perfect amount of sweetness as well. I think next time, I might add an extra 1/2 teaspoon of vanilla. Ended up with 13 nice size FLUFFY pancakes.

Hi! Love these!!! Any time I’m making pancakes, my family always asks if they’re these or not because they don’t want any other kind. So I want to mix together some of the dry ingredients as multiple batches (they go through them quickly) and put them in an airtight jar. However, if I decide to make a smaller batch of pancakes with some of the mix, how would I determine the amounts of the other ingredients I would need to add in? Thank you!

I made these but halved the recipe as it was only for one person. I also used almond milk like others suggested worked well. Mine ended up like crepes though? The batter was quite thin and watery should I have added more flour? Or is the problem here do you think the halving of the recipe… either way they were still delicious!

Whenever I order pancakes at a restaurant, these pancakes are what I’m hoping will get brought to my table! My ideal pancake. First time making from scratch. As some others have mentioned, I chose this recipe over a few others I found with reviews saying they turned out too salty or too runny. I did end up having to add a little extra milk for pouring consistency. I ended up making 9 pancakes, but I also didn’t measure 1/4 cup exactly for pouring, I just used a ladle. Each pancake was perfect! I topped with blueberries, strawberries, bananas, and Canadian maple syrup. My husband did the same but also tried one with peanut butter and fruit and he liked that a lot. Rave reviews from other family members. Will make this often!

Hmmmmm, I must have done something wrong, AGAIN. These didn’t turn out as well as I was hoping. I used 2% milk. The griddle coulda been too hot/not hot enough, mixing the wet ingredients didn’t look like it turned out all that great. Mixing everything together turned out really, really think. Must have added at least another half to full cup of milk. BUT, I do say and two of my kids’ say they were better than boxed pancakes. I’ll try again and change how I mix the wet ingredients.

Hi Shellbeee. You can premix the dry ingredients and store the mixture in a glass jar with an air tight lid. All you would need to add later are the wet ingredients!

Don’t write the expiration. Write the date made. It should last quite a long time, but it’s impossible to predict how long without knowing variables like the expiration dates of the ingredients you’re using in your mix.

I have to say that this is truly is the best recipe I have found so far for homemade panckes. I’m a huge pancake lover and everytime I go out for breakfast, I always order them. I have never found a recipe at home that meets my standards or that are as good as a box mix or restaurant style. These pancakes tasted great, cooked well, and had a nice light texture. They weren’t overly sweet and by themselves, subtle in flavor. I added a tiny bit of cinnamon for a hint of something extra. When I first made them, I allowed the batter to sit and rest. It became very chunky and thick. The pancakes tasted fine but didn’t spread across the pan nicely. Round 2, I stirred in more milk until the batter was more easily spreadable. These were even better since they cooked more evenly. I was initially skeptical that this recipe would be as good as the reviews boasted. But I have to say these really are wonderful and best recipe I’ve come across!

Absolutely the best pancakes I ever made. I usually use box as I’m not a huge fan. I prefer my homemade crepes. But while family love them. I did too. I served them with pure Maple syrup heated and melted butter. Yum. I made larger ones and got about six. Which fine because I made breakfast for dinner and served these with home fried potatoe, marinated bacon, eggs over easy and sliced warmed deli ham.

Fantastic recipe! This was great way to kick off veteran’s day for the boys and me. The cooking method works well on cast iron too. I used a little bacon grease on the cast iron and they ended up with a great, crispy crust. I may have added more vanilla than the recipe called for as I didn’t measure it, but the vanilla came through in the flavor. They were very nice and fluffy. Needed very little syrup. Thanks! Wow.Now we’ve made these like 7 or 8 times. Always amazing. I have learned to be careful to not add too much milk as this recipe is unforgiving in that case. I thought my batter was a little too thin, initially. So, I just whisked in a tiny bit of flour until it was incorporated. I had to do it at least twice, maybe the times? Regardless, they still turned out to be the perfect pancakes.

I can honestly say that before I tried this recipe I have never been able to make pancakes. I have tried a ton of recipes, mixes, and asked my mom and others for tips on what they use and how they do it. But mine always ended up being flat and just yuck. But I decided this weekend I was going to try to make pancakes again. And OMG these were the best pancakes I have ever had and definitely the best I have ever made. I made this pancake recipe exactly as written, including following your tips for heating up the pan. But (isn’t there always a but?!), since I’m a household of only one (human), I halved the recipe & used 1 egg. I was really nervous that using a whole egg would ruin the recipe and & make the pancakes heavy & not fluffy. But it didn’t! The batter was a little thinner than what you described in your “Tips”, so I let it sit for about 10 minutes to thicken it up a little. The pancakes turned out perfect. OMG they were good! So light, fluffy and tasty. They tasted so good that I only used 1/2 the amount of maple syrup on my ‘cakes than I usually do. (I hope that makes up for all the butter I put in between each pancake.)
Great recipe. And I have enough batter leftover for tomorrow.

I have to make gluten free ones for myself but use this recipe as a guide. I use only 1 cup of flour and lower the amount of baking powder. I mix the wet ingredients in a bowl and gradually add in liquid until i get my desired thickness.

After searching for a fluffy pancake recipe I have now found the perfect one. I just altered it a little to suit my vegan style. In place of the eggs I used 1 tbsp ground flax soaked in 3 tbsp water. I also added 1 tbsp apple cyder vinegar to the liquids. It was perfect!! Very fluffy!

I love that you use butter not oil and milk not buttermilk. I think most families have all the ingredients on hand which is great. I followed recipe exactly. I know people like to make changes to recipes and comment on their “improvements” but pancake people, please go for it and follow recipe. My pancakes came out with the perfect amount of sweetness and so fluffy. Love your tip of cooking on lower heat and wiping the butter in pan. The combination of low heat and very little butter allows the pancakes to cook without the threat of browning butter. They were perfectly cooked inside and golden-brown on the outside.

I’ve made pancakes for years for my family in many variations from many recipes. This is by FAR the best one I’ve found. Best of all it’s easy to use as a base for nearly any flavor . I’ve used this recipe with grated apples and cinnamon for apple cinnamon pancakes. I’ve added cocoa powder and little more sugar for chocolate pancakes. I’ve used orange zest and cranberries.. mashed banana… I’ve added whipped egg whites and pumpkin for pumpkin soufflé pancakes. I’ve even added spiced peaches and crushed oats and the only thing I’ve ever had to do is compensate with a bit more or less liquid depending on what I added.
I keep a constant container of the mixed dry ingredients so I can whip up pancakes at a minutes notice.

Ok. So I just finished off a plate of these, and I must give my honest opinion. I followed the recipe exactly as written and I must say…these were fantastic! Honestly speaking though, they didn’t turn out quite as fluffy as I was expecting based on other comments. I believe that was my own fault by over mixing the batter, which is a no-no with any pancake batter. The flavor of this mix was wonderful! I like how it doesn’t have much sugar because the syrup you choose (maple, honey, etc) to top it with will make the pancakes taste so good!
These are officially the best pancakes I ever made. After I finished making the batter, I let them sit for a while (I think 10-20 minutes) because I had to wash dishes and just walk around the house (it’s 60 degrees in NYC but it’s so hot). I used the quarter cup measurement and I made like 18 pancakes! I ate four and put the rest in the freezer.
I can’t wait to give some to my daughter when she returns!

My friend just returned from New York and brought me some just harvested Maple syrup. I couldn’t wait to have some! I don’t have pancakes that often so I didn’t have any pancake mix on hand. This recipe made great pancakes; light and fluffy. The only change I made was that I used Melipone Mexican vanilla instead of regular vanilla extract. You can find it on Amazon. Makes all the difference between good pancakes and great pancakes. The aroma is so wonderful I wanted to eat them out of the pan. I topped them with lots of butter and the fresh maple syrup. Delicious!

I absolutely love this recipe. I made it exactly the way it was written and it was fantastic….however I do like to use buttermilk in my pancakes so I started using that in place of my whole milk. I also add the baking soda directly to the buttermilk and allow that to sit. I melt the butter, add my vanilla then my one egg and beat it together before I add it to my buttermilk mixture. Its a very thick batter but thats what I like so I can spoon it onto the griddle and spread it out a bit. I’ve also discovered making the recipe this way and placing in a waffle griddle makes to die for waffles as well (my DD like waffles instead of pancakes). Such a wonderful recipe….thank you for sharing.

We use flax meal as an egg substitute. For each “egg” substitute 1TB flax meal in 3 TB of water. Stir well letting sit at least 5 minutes. Bob’s Big Red Mill is the best Flax Meal and has this egg substitute recipe on the bag.

Hi Karina! This is my go to pancake recipe! After years of trying to find “the one”, yours showed up on my FB and WOW!!! I have to admit that I made one adjustment and added another step. Here in the South pancakes just aren’t pancakes without buttermilk so I use buttermilk instead of milk. I always think mine out a bit so I do use whole milk for that. The addition I use is, I add a half Tbsp of butter and a tap of veg oil. It gives the outside edges that wonderful light crisp! They are AMAZING!!! I always add blueberries for my husband and chocolate chips for my daughter. I’m old fashioned and eat mine plain. My family says they are far better than Cracker Barrel!! These were so awesome & fluffy!! I did 1/8C white granulated sugar & 1/8C light brown sugar and added several dashes of cinnamon to the dry mix. I wasn’t even thinking and added the milk to the melted butter, which promptly curdled/ froze/ I don’t know, but it didn’t look right. My last 1/4 C of butter 🙁 SO, I subbed 1/4C coconut oil instead and they turned out perfectly!! Will definitely make again!!

I am experienced but this is my first attempt at pancakes. I tried Martha Stewart. Paper thin. I read dozens and all the ingredients looked alike. I’m so glad I watched your video where the cake rose up like a ghost. I try a recipe the first time exactly as written. No tweaks. No buttermilk, no separating the egg whites, etc. I followed your advice on heating the pan. The batter didn’t look like the usual thin batter so it was hard to tell when to flip at fist. But no matter how long or short it cooked the pancake was perfectly golden and thick. I have a heavy high quality pan so maybe that helped. They flipped easily with no batter spatter and no raw batter in the finished cake. They look just like yours. Did I mention they taste AMAZING! It’s nice to trip over the keeper recipe on only the second try. I might try out malt powder or pecans but my search for a basic recipe is done.. I am curious to know if buttermilk will accelerate the baking soda action which is the one item less common in other recipes. Goes to show that treatment and proportions are just as important as ingredients.

Finally! The search is over. This is the perfect pancake recipe! Light, fluffy and delicious, not to mention super easy to make. I did decrease the baking powder to 2 teaspoons and the sugar to two tablespoons and they were fantastic! This is my new go-to recipe!

Just wanted to let you know that this recipe is as failsafe as you say- I am a Chef in a small cafe in Australia and we use your pancake recipe quadrupled every Sunday. These really are the best! Super fluffy and full, not flat. I was afraid of the amount of baking powder, but they have a great taste, can’t taste the baking powder at all. I think my batter was a little thick and we substituted non-dairy milk and oil, but they still turned out great. This recipe went into our recipe box, thanks!!

Honestly eyeballed the entire recipe (except for the milk and flour) and it came out so fluffy. The batter was a bit thick so i added like 1/8th cup of water but these are the best pancakes I’ve ever made from scratch. Really fluffy like iHOP fluffy. Keeping it as a staple.
