Ingredients 
 

Chocolate French Toasts:

  • 3 large eggs
  • 1/2 cup unsweetened almond milk or milk of choice
  • 2 tablespoons unsweetened cocoa powder I use Hershey's
  • 1 tablespoon sugar of choice or natural granulated sweetener
  • 6 slices thick bread I use sourdough

Chocolate Cherry Cheesecake

  • 6 tablespoons low fat/fat free cream cheese
  • 2 tablespoons low fat greek yoghurt vanilla or plain
  • 1 tablespoon cocoa powder
  • 1 tablespoon natural sweetener or sugar of choice
  • 14.5 oz canned pitted cherries in natural juice/syrup sub with fresh cherries if you wish

Chocolate Maple Syrup

  • 1/2 cup Maple Syrup
  • 1 tablespoon cocoa powder

Instructions 

French Toasts:

  • Whisk eggs, milk, cocoa powder and sweetener/sugar until combined well and free from lumps. Add bread (one at a time) and thoroughly soak through. Spray a good quality nonstick pan or skillet with cooking oil spray, and fry bread on low – medium heat until cooked on both sides (about 4-5 minutes each side). Repeat with remaining slices.
  • While toasts are frying, prepare Chocolate Cherry Cheesecake and Chocolate Maple Syrup…

  • In a medium-sized bowl, add the cream cheese, yoghurt, cocoa powder and sweetener/sugar, and mix until smooth. Fold the cherries through and mix again.

  • Combine maple syrup and cocoa powder in a jug, and whisk really well until combined.

  • Stack french toasts with cheesecake filling and top with syrup.

Notes

I used thick, chunky sourdough bread for these toasts, which allowed for 6 slices for the quantity of chocolate egg wash (and 3 serves) BUT if using thinner normal sandwich bread slices, the egg wash could easily allow for 8 slices and serve 4.

    Though Maple and Chocolate have been used together for years (maple cream soft center chocolates) I would suggest something different, how about a drizzle of Hershey’s syrup with a touch of Amaretto to highlight the cherries and then top it all off with some creme fraiche.
