Hey, I’m Karina!

Food and I have had a long love story. For years I chased the “how to get skinny” dream and got lost in crash diets. But now I’ve found balance and a happy relationship with food. Here you’ll find everything from low carb recipes that make you feel good to indulgent desserts for your next cheat day. Plus, plenty of easy dinners that take the stress out of cooking.


My Relationship with Food

Food is meant to be enjoyed. Some nights it’s a crisp salad, other nights it’s a gooey cookie. In between, I love sharing quick weeknight dinners and easy family meals that prove cooking isn’t just about eating, it’s about gathering, laughing, and making memories with the people you love.


Life as a Cancer Survivor

I’m a cancer survivor, and that journey (read more about my cancer journey here) lit a new fire in me to celebrate life with gratitude, comfort, and plenty of good food. Every recipe is about gratitude, comfort, and connection. Life is too short not to enjoy good food.

    So good but we forgot to add the eggs and vanilla, and then as we were scrambling to get the eggs, we drooped one hahaha but the brownies are still in the oven so we don’t know if they are actually good. Also, my crazy friend added an additional cup of sugar! She said she was “ trusting her gut”

    I love your blog. First found it a while ago looking for a good Butter Chicken. Loved it. I cook 2x a week for 4 neighborhood families. And when I look for recipes online – if there is a cafeelites.com version THAT is the one I am making. Your recipes are well written, easy to follow, ingredients that don’t require running around . . . just really awesome. Making Shrimp Scampi on Thursday.
