Easy White Wine Marinara
Simply Seafood Perfection… We love seafood. Any seafood. This meal felt so indulgent…but so light, low in fat..and healthy all in one!
So, since starting this blog, my parents have been wracking their brains trying to figure out, “What should Karina cook next?” When it should be, “What should we cook for Karina’s blog next?” because let’s be real here… They love cooking just as much as I do. And to be honest, I don’t care what they cook, because I already know that whatever it is…I’M IN!
It’s kinda funny actually. They get just as excited as I do when I come up with some magic brownie. I love them!
Anyway…so talking with my parents last week, my dad just about burst out of his pajama pants suggesting this Marinara, and he was looking forward to making it all week. By the weekend, it’s safe to say we gave him a couple of glasses of wine to calm his nerves. A little for the marinara…a little for dad (for example).
Seafood is so fresh… and so much variety! Salmon; prawns; calamari; mussels, served on a bed of Spelt pasta and all mixed with a beautiful aromatic garlic olive oil and white wine, and seasoned with parsley.
All washed down with a glass of white wine.
Ingredients
- 250 g (8oz pack) of spaghetti pasta, boiled and drained
- 2 tablespoons garlic olive oil
- 1 onion, diced
- 2 teaspoons minced garlic
- 6 mussels, prepped and scrubbed
- 400g (14oz) salmon fillet
- 200 g (7oz) calamari rings
- 350 g (12oz) peeled green prawns
- ½ cup (125ml) dry white wine
- 1 lemon, juiced
- Salt and pepper to season
- 1 handful of flat-leaf parsley leaves, chopped finely to serve
Instructions
- In a large saucepan, fry onion and garlic in the oil
- Add mussels, salmon and calamari and cook for roughly 3 minutes.
- Add prawns and stir everything together, allowing to cook for a further 2 minutes
- Pour in the wine, lemon juice, salt and pepper to taste
- Allow to simmer for a further 3 minutes, or until the prawns change in colour
- Add in the parsley and take off heat.
- Pour in the cooked pasta, and mix all ingredients together, breaking up the salmon into bite-sized pieces unit the wine and oil have fully covered the pasta and seafood.
- Squeeze over a little extra lemon juice and sprinkle with remaining parsley
