Eggplant Margarita Pizzas
So simple and so good! Did I mention that there is NO better way to eat an eggplant then with my one and only love… PIZZA!
I love pizza. I just do. And I’m always trying out ways to quench the craving without the carbs! Well, this is NO EXCEPTION! Even if you don’t love eggplants, you will probably LOVE THIS!
And only 104 calories for 2 slices! (Better than the 600+ for traditional). A simple snack idea and a quick pizza fix!
Ingredients
- Eggplant Slices
- Low fat grated mozzarella cheese
- Tomato paste
- Garlic powder
- Italian pizza herbs
Instructions
- Panfry eggplant slices and finely chopped onion with a little garlic olive oil until just tender.
- Spread tomato paste onto slices and season with garlic powder and Italian pizza herbs. Top with grated low fat mozzarella cheese and grill/broil on medium heat for 10 minutes or until the cheese has melted! OR microwave for 1 - 2 minutes for a faster cook time.
