Hi Karina – I found your web site and your Black Beans & Rice recipe today, and made it for dinner to accompany our BBQ pork ribs and fresh corn on the cob (it’s Sep, so fresh sweet corn is still available!). It was very good and for sure we’ll be making it again, however, I do have a few comments for you and your readers.
First – timings. I’m pretty darn good with a knife, but even I can’t peel and finely dice an onion, peel and mince 5 cloves of garlic, measure out ground cumin, make a quart of chicken broth, plus open, drain and rinse two cans of beans – all in five minutes! I think that 15 mins is a little more realistic for the prep time!
Timings for the rice and beans went the other way – it didn’t take 20 mins to cook the rice and beans – but that could be a difference in stoves. I also suspect that I might have had the rice boiling for a few minutes before I actually got the beans into the pot.
Last – the optional garnishes. We added some chopped jalapeño peppers, chopped parsley, and lime juice to our own plates. I should have mixed it into the bowl of rice and beans. And been more generous – at least 4 – 6 Tbsp each chopped parsley and chopped (jarred) jalapeños. Also, next time we’ll use freshly squeezed lime juice – and be very generous with it a well. The commercial lime juice just didn’t do the trick. I think that I should also have added a pinch of salt.
All of this is to say – thanks for a simple, but simply great, recipe! I’m always glad to find a recipe that is clear, concise, easy to follow, and allows the cook to adapt it to their own tastes! Cheers, El

Imad this as a three tier cake for my daughters wedding and it turned out amazing, used butter cream and crumb covering, it looked stunning. It was moist and celicious.
