Loaded Taco Grilled Cheese is a deliciously crispy way to combine two of my favourite food groups - grilled cheese and tacos! Crunchy grilled bread with gooey melted cheese and a hit of Mexican flavour.
In a large nonstick pan, fry onion until transparent with cooking oil spray. Add tomatoes and cook until soft. Add mince and cook while breaking up with a wooden spoon. Add the seasoning and water and cook Taco mince to packet instructions. Set aside.
Grilled Cheese:
Combine smashed avocado, salt to season and lemon juice. Mix well.
Build sandwiches with 'guacamole,' spinach leaves, 1/4 cup taco mince per sandwich, tomatoes, cheese, salsa and sour cream/yoghurt (if including). Top with bread, and spray a little spray oil onto pan. Fry until browned on both sides, cooked through, and cheese has melted.
Notes
To get the perfect crispy golden bread when grilling, put a light layer of butter on the outside of each bread slice before assembling your sandwich. It will fry up on the outside when grilling in the pan.
