Season the chicken pieces with salt and pepper, then toss them in the cornstarch until every piece is completely and evenly coated.
Heat the vegetable oil in a large non-stick skillet over medium-high heat.
Add the coated chicken and cook for about 8 minutes, turning occasionally, until the pieces are crispy and golden all over.
While the chicken is frying, whisk together all the sauce ingredients in a separate bowl.
Do not include the sesame seeds and green onions on this step
Pour the sauce directly into the skillet with the cooked chicken and let it come to a gentle simmer.
Drop the noodles into the pan and toss everything together for about a minute.
You want to cook it just until the sauce thickens slightly and the noodles are hot and completely coated in the glaze.
Remove the skillet from the heat. Top with a sprinkle of sesame seeds and fresh green onions, and serve immediately.
Notes
These noodles make excellent leftovers for a quick lunch the next day. The pasta will absorb some of the sauce as it sits, but the texture is easy to revive.
Storage: Allow the dish to cool completely. Transfer it to an airtight container and store it in the fridge for up to 3 days.
Reheating: When reheating on the stovetop or in the microwave, add a splash of water or chicken stock. This helps loosen the sticky glaze and brings the noodles back to their original texture.
Freezer: I do not recommend freezing this meal once the noodles are mixed in. The pasta tends to turn mushy when thawed.
