Banana Blondies

Banana Blondies are flourless, rich in flavour, super fudgy and healthier than the usual blondie recipe. Buttery, gooey and sticky, they make the perfect filling snack!

Ingredients

  • 2 medium ripe bananas
  • 1 3/4 cups rolled oats
  • 1 can chickpeas, (about 1 1/2 cups drained and rinsed)
  • 3 tablespoons peanut butter
  • 1 teaspoon baking powder
  • 1/4 cup honey
  • 1/4 cup sugar, (or Natvia)
  • 1 pinch salt
  • 1/2 cup milk
  • 1/3 cup semi sweet or dark chocolate chips

Instructions

  • Preheat oven 200°C | 390°F. Spray a 8x8 inch square baking pan with cooking spray and put aside.
  • Throw ALL ingredients (except chocolate chips) into a food processor and blend until smooth. Fold half of the chocolate chips into the batter. Pour into prepared pan. Top with remaining chocolate chips.
  • Bake for about 15-20 minutes until a toothpick inserted into the centre comes out clean. They are VERY moist when taken out but they will firm as they cool. Be careful not to over cook or they will become dry.
  • Once cooled gently cut into 16 bars.
