  • Extra sweetener and cinnamon for sprinkling

Instructions

  • Preheat oven 175C | 350F. Spray an 8x8-inch baking tray with cooking oil spray. Set aside.

Base:

  • Start by making the base. Throw four, oats, almond meal and sweetener into a food processor and blend until finely grounded.
  • Add the apple sauce and butter and blend again until a dough forms.
  • Spoon dough into a bowl and knead lightly just to combine.
  • With damp fingers, press base mix down into the tray, and place into the oven to pre-bake for 10 minutes.

Filling:

  • Next. Combine apples, sweetener, lemon juice, cinnamon and vanilla in a pan. Mix in custard powder/corn starch and cook over medium-low heat, stirring occasionally, for 10 minutes or until apples have softened. (Add 1 - 2 tablespoons water only if needed)!
  • Set aside to cool.

Crumb:

  • To make the crumb topping, combine all crumb ingredients in a separate bowl. Cut into butter with your fingers until crumb mix is combined well.
  • When base layer is ready and cooled slightly, pour apples over base, and top with crumb.
  • Dust with extra cinnamon and sweetener/sugar if you wish.
  • Bake for a further 40 minutes (covering with foil half way through baking time so crumb doesn't burn).
  • Test the apples are soft before removing from the oven.
  • When cooled, cut into 16 squares!
