- Eggplant Slices
- Low fat grated mozzarella cheese
- Tomato paste
- Garlic powder
- Italian pizza herbs
Panfry eggplant slices and finely chopped onion with a little garlic olive oil until just tender.
Spread tomato paste onto slices and season with garlic powder and Italian pizza herbs. Top with grated low fat mozzarella cheese and grill/broil on medium heat for 10 minutes or until the cheese has melted! OR microwave for 1 - 2 minutes for a faster cook time.
