Welcome! My name is Karina and this is my internet kitchen hang-out. A self-confessed balanced foodie sharing some waistline friendly recipes that are full of flavour. Life is too short for bland and boring. It’s about finding balance and falling in love with food all over again!
Through the recipe archives you’ll find a variety of easy to make, healthy food with simple ingredients. What does that mean exactly? It means I provide some low fat, some low carb and some cheat foods. Recipes that feel like an indulgence without the regret.
After years of feeling lost in a crazy world full of diets, I’ve finally arrived at a comfortable place of loving food without any resentment or deprivation. This is where you’ll find a good ‘meal in a salad’ one day and a delicious deep dish cookie the next, never compromising flavour.
Gone are the days of starvation diets, weighing broccoli, boiling chicken and counting single peas on a plate. From pasta and brownies, to healthy meals and donuts, if I can find a delicious way to include them in without the guilt, you bet you’ll find them here. You can bake your cake (or cookie) and eat it too!
What started out as a food diary on Instagram in early 2014 bloomed and developed a love affair both in the kitchen and behind the lens. Fast forward two years later and Cafe Delites has fast become a successful blog and my second home. Here is a list of where Cafe Delites recipes have been featured worldwide.
This is my new path. After surviving cancer, (Stage 4B Hodgkins Lymphoma) and a lot of life’s difficult battles, including childhood molestation and abuse; I am here, I am alive, and although my life is far from perfect, I am eternally grateful to have been given a ‘second chance.’ Click here to read more about my cancer journey (yes, I wrote a book too!)

Hi Karina. I was reading with interest your ‘scampi’ recipe then I realised you don’t use Scampi your using Prawns am I correct , forgive me if I am incorrect . I have added a ‘scampi’ description below. Let me know if your recipe was for prawns and not Langoustines. I absolutely adore scampi particularly Whitby Scampi its the best in UK
Peeled whole Scampi, also known as Dublin Bay Prawns or Langoustines. Many chefs believe that raw Scampi have a better flavour than Prawns.

You and I clearly share the same feelings about strong, punchy flavors… when I saw that your Honey Mustard Salmon recipe called for 5 garlic cloves I knew we were kindred spirits — usually I have to double the garlic in a recipe to be happy with the result 😉 Tonight I tried the Juicy Oven Baked Chicken and it was another knockout. My mom’s not big on meat so I am thinking of trying that same flavor combo on shrimp next (obviously with a big adjustment to cooking time, I would probably just skip straight to broiling). Hi Karina, I think there is a mistake in your Honey Mustard Chicken times, it states 20 minutes covered then 15 to 30 minutes uncovered. Way too long and other chicken breast recipes state 18 to 22 minutes. I cooked it tonight and it was way overcooked. Just think you need to amend cooking times

Love this site and I have made several recipes. I have two questions for you. Red Lobster used to make a gumbo that was kind of brown, thick without being watery. I remember dipping biscuits in it and made it a main course more than once. Do you have a recipe for this?
The second, I was diagnosed with an incredibly bad case celiac. Have you thought about which recipes are naturally gluten free and which could be made gluten free?

Sandra, 1 cup is a bit under 250 ml, 237 ml if you want to be exact. 1 teaspoon (tsp) is almost exactly 5 ml. 1 tablespoon (Tbsp) = 3 tsp = 15 ml.

Many years ago when I lived in Canada, my friend’s husband was from Uruguay. He used to make the most delicious BBQ meats and that was when I was first introduced to Chimichuri. I absolutely loved this couple and we have since lost touch. I have the fondest memories of his delicious cooking. He would bbq sausages of some kind that were amazing.
I am going to make your chimichuri sauce tonight.

Karina, I am/was a 350 lb. male and I’ve had this problem where I would lose about 30 lbs. just to see it come back over a short period of time. I am not into diets. I simply eat better things and drop the junk food. I believe one issue is I run out of good tasting healthy foods to prepare THAT I ENJOY. So I end up going back to my old ways. Another issue that exists is that when one tries out a new recipe that is found online by a so called chef, it doesn’t come out tasting or looking as advertised. then came your recipe on Simple Chicken Teriyaki Stir Fry. It was amazing. It’s just as good as the one you’d buy at the mall’s food court, but better for you ( I have to watch my salt intake as well you know.) I’ve been working on loosing weight and am now in my mid 330s. Adding your recipe to my repertoire will certainly keep me on the right path. Keep up the good work. I’ll be watching.

My birthday is next week but we’re celebrating with Friends on Saturday. With around 30+ hungry friends…
So, I thought about making fajitas and began my search for a good recipe. The ones I have found and tried before taste like cinnamon, and the chicken is too bland for my taste. I needed to cook a lot, and fast for that matter. So I thought about grilling the chicken.
I searched and searched, and suddenly I found: ” Best Chicken Fajitas”. And I thought: …”after the recipes I already read, this deserves a chance as well.” So I went through it.
Last night I made my test (before the big preparation), with 2 huge chicken breasts. I did not make them on a cast iron pan (I don’t have one larger than 12″, I could have used this pan, but I wanted to try the same process I would use for the larger amount), so I made them on the grill, but following your directions, until the chicken was 95% done (just a tad pink)… almost done. Then I came inside the kitchen and ready up the vegetables (I like them crunchy and not all soft), cut the chicken in strips, and then incorporated everything together.
Let me tell you (and all)… this recipe is Restaurant Quality, or even better: Grandma/Mom Quality.
The only things I added/changed was Granulated Bouillon (same quantity as salt), and instead of hot pepper flakes I used some sweet chipotle (no salt) ground condiment.
Excellent recipe and perfect presentation… THANK YOU!!!

The Crock Pot mashed potatoes recipe is second to none! The have been a hit at the last three parties. OMG Karina, your Fajitas are the BOMB. My daughter just couldn’t get enough of them, and neither could I. As you said, your recipe is “so quick to throw together,” I quickly made a second batch by popular demand, which was rapidly devoured. It was such a pleasure to see my daughter enjoy her food, especially when preparing for Final Exams. I used roast pork shoulder meat, iso chicken. She thought it was beef, and also used both flour, as well as whole wheat tortillas from ALDi. Both were excellent, and there was really no extra prep time, cos the ingredients were on hand. I would have had to use at least another 45 minutes to go to the store to pick up the seasoning. I also took a shortcut and roasted the julienned peppers in the oven. The tortillas were dripping with these incredibly juicy, delicious fajitas. i plan to try these with chicken soon.

Your recipes are all SO AMAZING! I would like to ask a small favour though. If you are able, could you please add the weight of all ingredients? (Grams preferred). I have bought myself an interactive smart scale and am in the process of entering my favourite recipes into it. It cannot understand how much a tablespoon of fish sauce should weigh, or a pinch of salt, or even 400ml tin of coconut milk (can you guess which of your recipes I was just making?)
I have been painstakenly weighing each gram of spice, as I measure them out teaspoon by tablespoon by cup. But if you have the time/means, it would be great for so many if that info was built into the recipe.
PS, once its done, the measuring of spice mixes and marinades are SO MUCH FASTER than measuring by teaspoon. And nowhere near the amount of cleanup either!

I tried to print the lemon chicken piccata recipe but just got a blank page. Is there something I need to set up in my subscription first?

Hi Pat! There are no extra steps to print recipes. I’m not sure why you’re having issues printing! Sorry I can’t be of more help 🙂

My husband likes to cook, but we can’t ever think of what to make. So recently I have been sifting through google images for pictures of things that look good and healthy for dinner then I send him the picture and he grabs the ingredients and cooks it up. I came across your picture of the spinach and ricotta roll ups and sent him the snapshot hoping he will make it tonight. Haha. Karina, so happy I came across your chicken salad recipe on Pinterest. My husband was just diagnosed with pancreatitis and fat is now the mortal enemy. This healthy recipe looks wonderful. I’ll just give him less avacado and it will be perfect. Served with rice and he’ll get necessary carbs. I have to look hard to find tasty, low fat recipes where weight loss is not the goal. Honestly I have no idea! I guess i have to cook since I have a circus here (aka my family), and then I shoot whatever we eat. It is time consuming and a lot of work, but I love it so much so it’s not really work for me.

It really depends what recipe you’re wanting to replace them with. The recipes are created with the chickpeas to add the certain texture, etc. You can definitely try and replace them with flour, however please keep in mind I can’t guarantee the result 🙂
